There's probably another 2000 breweries in that size range since you gave this talk. My brewery has a 15 barrel single infusion brew house. We do 45,000 barrels a year. All this still applies to me at 5000 barrels and under. There's four big factors that really affect your house efficiency. How thicker or sorry your how you set your grind on your mill is very important. And then the last one, surprisingly, is your actual technique.
