How to Make Good Soup?

Soup needs to be on one hand interesting enough for an entire bowl. It can't be samey. So it needs to have like layers of flavor. A bone is just very nice for cooking slow because it's so much flavor. Cooking on the bone is so important. You start with a piece of meat. I wouldn't make sure it's got some fat to it. That's not the that's not the point of a stew really.
