Most regions in Italy have some version of pasta fresca. The most famous are spaghetti and macaroni, but there are hundreds of varieties. There are enormous pastas, like skefoni, which are just an enormous shell or shape. Each pasta's shape goes with a different kind of condiment or dressing or broth.
