Stepan wanted to make sure the restaurant had an elegant decorps. He also wanted people to feel the thrill of being in a rugby stadium. So he decided to pay tribute to clerment ferrans time and use their colors, yellow and blue. The day of the opening was nerve racking for stephan. There was a rugby game, and the marsel michelin stadium was packed. And it was the first time stephan served arepa gastronomique as a chef.
