I think I've taken plenty of advice from him from that book and also you know the TV shows that he does of course. That book was was one of the main catalysts for me getting into a kitchen. Yeah if you're ever at a place and there's like a beef dip or something on menu, chances are it's from an event they had the day before where they over calculated how much beef they were going to need. And they just shave down the rest of it and try to pawn it off in twenty dollar sandwiches. Because that's just what was left repurposed and refashioned into something else.
