Eggs are hydrophylic and hydrophobic. Good non stick pans will have chemical groups on surface that don't interact with the chemical groups on the egg protein. If you've got pans that are not non stick, or they're a bit older and may be bashed about a bit, the chemical groups might form bonds with the actual surface of the pan. To avoid that, you need oil, which can act as an intermediate layer, preventing the protein from sticking to the pan.
