The Myad Reaction in Rice

Wok-hay is like the perfect seared taste of rice cooked in a wok. It uses the Myad reaction, which works on fossilized poo. A restaurant called the Chairman in Hong Kong has to spend a year practising cooking stir-fry. They're only allowed to cook for other chefs and not customers.
