The Difference Between Baking and Pastry
In traditional French style restaurants, there is usually a distinction between baking and pastry. Ice cream actually is pastry in this context, even though ice cream usually contains no pastry. Custard is pastry, meringue is pastry, etc., because they all come from the pastry department of the restaurant kitchen. Most things we do call baked goods are based on grains that have been dried and ground into a fine powder, i.e. flour.
