It turns out that fat enhances the absorption of polyphenols. What happens when you blend it with fats, or even when your body does it, is it changes the structure of the water in coffee so that your body can more quickly use it inside cells. But if you had heavy cream to your coffee, the amount of protein that you get from cream or even worse milk is sadly enough to bind to thepolyphenols.
