How to Write Quizzes?

i'm finishing up my class pert cohort, and we did a retrospective where i asked the students what could be better. And it seems like the thing that they really had issues with were the quizzes,. Is that because they were altered questions? No, because writing quizzes is really hard. Multiple choice is always difficult for everybody. So there'll be questions to day, and we will make mouth noises about how the questions make us feel.
