Is Wiley a Sugar Scientist, or a 'Sugar Scientist'?

Wiley was a sugar scientist. His formal training in chemistry is to sort of examine various sugars under under instruments. He's lucky on a bunch of other things, or at least his his gutt, tells him the right thing. And then, just a lot of things, he's abs dead wrong. But even when he's dead wrong, he's very historically significant because people respond to his incorrect opinions as often as they respond to his correct ones.
