Going from cream to butter requires helping break up the fat globules, a lot more fat to find each other. And if you get it in the sweet spot, then it's in this perfect scenario where it's not too liquidy. So that's why I say whipped cream is like a transient state because it's not really solid and it's not made to last indefinitely. It needs like special conditions to form and stay formed.
