How to Shoot in Manual Mode

When shooting in manual mode, I just always leave my camera 99% of the time in center weighted because that's kind of where my subject is going to be. So, while I will glance at the at the meter reading, whether it says it's exposed or overexposed underexposed, I don't necessarily use that as the end all be all.
