Excelsor is a variety of the Liberica species of coffee. It's grown for years in the wilds of Central Africa, but hardly appeared in the global market. Could this emerging variety be in our cappuccinos of the future? Dr Aaron Davis says it will depend on what happens over the coming decades with Ravica and Robusta. He also talks about genetically modifying coffee crops to make them climate resilient.
