The majority of people on a plant-based diet are doing this to decrease their risk of cardiovascular disease. When we consume certain animal products like red meat or eggs, etc., we are also consuming carnitine and choline. And when those are metabolized by our gut and then move on to our liver, they produce a compound called T-M-A-O which is associated with atherosclerosis.
