The Effects of Grain Consumption on the Brain
The brain and gut are connected by a cranial nerve called the vagus nerve. Some of the proteins found in wheat, especially the gluteomorphins actually can affect the act as neurotransmitters or neurochemicals. The blood brain barrier is very similar to your gastrointestinal barrier. And so you can develop basically a porous blood brain barrier, which allows chemicals in the brain that generally don't get allowed in. That can start to affect mood and behavior.
