The original Star Tours featured the voice of Paul Rubens until they revamped it several decades afterwards. The original guy who worked on that project is a legendary Disney Imagineer named Tony Baxter. He told us some great stories about even being invited into George Lucas' inner sanctum briefly. Tom Fitzgerald, who was the writer on the first show, became in fact led the entire effort on the re-imagining.
