The Importance of Variety in Wine

I'm concerned about approaching one making from this earth first perspective. And so those varieties are going to change with the conditions of the living world as the living world conditions change because we're going to find new things that thrive that do better. Right now, you know, like the wine industry is essentially a global monoculture of a handful of European grapes that have been blown for 200 years. I think it gives cider makers that freedom to sort of just blend and have,. you know, dozen different varieties and all that kind of stuff.
