Team topologies is a fantastic book, because it outlines four different types of teams that you're going to see in any company producing software. You can basically use any organization structure with fewer than 150 people; anything below 150 will probably work. The number of each type of team that you are going to need changes as a business grows. If you want to learn more about scrum, the other book that I constantly recommend is a central scrum by Kenneth Rubin.
