Saffronol Is the Most Active Compound in the Saffronic Extract
Safronol is a terpene it's the volatile thing you smell with saffron. It comes from the drying process so during the drying enzymes get activated and then the enzymes cleave off the sugar group on the picrocrosin and then you have saffronol. The drying stage is also crucial for saffron because when you just harvest the stigmas and you don't dry them properly they're not good. To look for saffron quality you need saffronl in there but isn't necessarily in high concentrations in just the raw stigmas you have to dry them more like makka.
