How to Find a Hospitality Person
From the very start of the recruitment process, you make it very apparent that this is a hospitality business. We're making five or six hundred coffees a day and there's five people working behind the bar on a weekday. You need to find someone who's going to fit in with that team first and foremost. And also, I really, really try hard to show respect, prove respect to them from the very start. That you respect them and you respect who they are but also that you expect respect back.
