i feel like a lot of shefs my age, i would say, people that have been in the business minimum 15 years, are now asking themselves, i what's going on is this? I think it's natural for everyone to question what they want to do. Food delivery has changed a lot of people's perceptions of affordable eating. The mid market including mammy pop and many individual independent restaurants,. are getting squeezed out. Super hiani puts destination dining where it's two, three, mission star nd you're going somewhere else.
