Why Do You Want Your Team to Play Two Touches?

I've just got one question if you don't mind me cutting across to you. Why do you want people to be too touch wizards? Professional footballers have always taken fewer touches than maybe an amateur footballer would because they take less time to orientate themselves with body position. It's just not skillful.
