The Importance of Gluten in Celiac Disease
Since I was diagnosed, it's become a real market for food. So we have breads and pastas and all sorts of sweet treats and anything we could possibly imagine. It's really like vegetables, fruit, chicken, fish, steak, those things are naturally gluten free. And when a celiac patient eats gluten, the gluten, the body attacks that gluten as an invader. They're made up of small little finger like objects called villi. The villi will become flattened out over time, which really then causes inflammation, damage.
