The thickness of a handle probably doesn't matter very much but it does matter for balls hit off a sweet spot. The softer wood is going to vibrate more than the harder wood. Nowadays I think you have ash versus maple. Maple I think is harder than ash. But the people have done really really careful studies trying to compare the performance of ash to maple in terms of the ultimate exit speed.
