I think the answer is no. I don't think there's any very obvious way to use it as strong evidence against a literal interpretation. It would have to look something like maybe you could show that a certain detail entered the story many centuries after the flood happened, and it looks like this must not have been an original part of the story. And then that detail shows up in the story, in the biblical story. But that would be, I think, a pretty hard argument to make. The fact that these other stories exist provides some evidence for alternate readings, alternate understanding of what's going on in the text.
