The Importance of Citation in Cooking
Cooking at some point is appropriation. If only from your forefathers and mothers, right? There's no new idea. It's somebody's already done everything. Even in tangy tart hot and sweet, I give citation. My first cookbook was called Easy Exotic; that title makes me cringe today. What I was trying to do is to demystify dishes that are thought of as quote unquote exotic.
