When i think of mammy, i think, even if it's not literally texture, it's a layer. It's like painting. And thereis this really funny line where i was reading that the artist paul mc carthy once said, daniel, i feel like i'm eating robert rymon. So was always a dream of mine to cook in this way, to say a lot by doing little. But it takes years of practice, and your craft has to be elevated to such a level that very few people can achieve it.
