Introduction

The movement to abandon tipping at restaurants predated the pandemic. The Me Too movement and the racial reckoning of 2020 brought new awareness about how much the service industry depends on the practice. In 2015 and 2016, a wave of chef and restaurant owners responded by getting rid of tipping altogether. Among the leaders in that movement was a vegetarian restaurant in the East Village called Dirt Candy.
