Are the Proteins Randomly Chosen?

The number of possible protein sequences is almost infinite. The ones that are actually seen are a relatively small sob. But once you have evolved proteins that have certain attributes, the question is, do you have enough postage stamps to fill in? And apparently answers yes, right? Right? Which is not obvious.
