The Challenges of Being a Home Baker

There are very few secrets. They're not really secrets. Even professional bakers may know something, have learned something that one of us doesn't know. But i think that that comes from experience and paying attention. So we try to be very attentive to what we're doing every day so that we can really understand what's happening. And we have the opportunity, with a lot of repetition, to do that. It's somtthing. It's a secret. Its maybe that they were doing a better job of being a student of the work that they were Doing.
