How to Create a Restaurant Around Traditional Foods?

I feel like, especially in America, it's when you start to do really, I don't know, traditional foods or try to create a restaurant around one sort of style of cuisine within a culture. It would have to be a single dish, right? And like maybe get like a little buzz behind it. Let's talk about Richmond because Richmond is close to me. My sister-in-law started a restaurant, Denimo, you run restaurants there. You just opened this really cool wine shop called Celadora,. I've done a couple of events there. But yeah, I just feel so fortunate that people are open up their doors.
