I had been slowly gaining weight over 10 years without noticing, and my waist had crept up to 4 inches more than my ideal size. My first diet change was fairly simple, to stop eating meat, which forced me to seek out more plants. I now look at plants differently, selecting varieties that have more redness or colour on the leaves that signal their protective polyphenols. Just boiling vegetables now seems plain wrong. Experimenting with the vegetables left in the fridge to make a curry or Middle Eastern dish became fun.
