In traditional chinese medicine they are looking for a cap that is quite uniform in size. Growing rishi by the log method inoculating the log burring it on the ground is an intensive process. The demand for exported rishi is skyrocketing and demand for rishi consumption in china and japan is already quite high so this then also means that maybe it's being done at a more industrialized scale in indoor grow environments rather than out in nature with all of these beneficial microbes, proper water source etc etc So that might be why we're seeing some of these differences.
