Allicin is the pungency in garlic. It's the main thing that you kind of want in fresh garlic, in fresh garlic at least. And it doesn't work in prepared garlic products because it starts to break down the second that it is brought into being. So if you chop up some garlic in advance of your recipe, right, it'll taste great in the refrigerator for today. Tomorrow it'll be a little bit less powerful and the next day it'll be even less powerful than before.
