This menu has been put together by four people, René Redzepi. There's Mete Sobug, who has been the test kitchen since 2015. Junichi Takahashi, Japanese chef. Thomas Frebel is a key person in the original test kitchen. And he was really excited to be in Japan and discovering Japan. He eventually opened this restaurant called Inoa in Tokyo which was kind of like Noma style, but using entirely Japanese ingredients.
