Dr. Kellogg wanted something more palatable than porridge at the Sanitarium. He recruited his brother W.K. to help him with R&D in 1894. The dough broke into flakes, and Dr. Kellogg thought to himself, why not toast them? While testing, WK found the flaking process worked incredibly well with corn.
