The article currently states that most paella chefs use calaspara rice, by which I assume they mean the balilla ex Solana variety grown in Valencia. And so it goes on and on and on. What do we know? How do we know it? Who gets to decide? The controversy inside Wikipedia goes beyond paella. It goes on to a decades-long battle between the inclusionists and the deletionists.
