The History of the Michelin Guide

Michelin is the tire company and they have a really fun story. In order to sell tires, you need people to think that they need automobiles. And so it's like this institution. This is what the French cooking is. It becomes accessible to New Yorkers not just New Yorkers who can travel to these fancy restaurants. To this day, classical French cooking and in particular the Escofier system are regarded as the foundations of Western culinary technique.
