Myer's Secrets to a Good Restaurant
Setta was myers mentor until the day he died two thousand one. He had this amazing here's what he taught him. Do a few things consistently well, and do them well every time. And three, if you're in charge, be in charge. I asked myer, does he mostly like sparks because it's familiar? He has all these sentimental stories, but if he didn't have the stories, is it actually good? What makes a good restaurant? The answer i got made me realize that the question itself doesn't make sense. In the danny myer philosophy of hospitality, you should be sentimental about your favourite restaurant.
