Breakside Pilsner - What's Your Philosophy?

Breakside Pilsner has been a beer that we've made since 2012. The original recipe of Breakside Pils had for a 30-barrelled batch of pretty substantial Whirlpool charge over a per barrel. It was all European hops, mainly using Huylerta Hairs' brooker, which is still the key hop in this beer. We've changed some other hops in there now. But with, it was definitely more of an orientation. It looked almost like an IPA or a paleo-type hop schedule with a very, you know, a small bittering charge. And so when we opened the production brewery here, we wanted to make a Pilsner
