The Evolution of Sourdough Bread

For thousands of years, sourdough was being used by each and every baker or person that would bake bread. In Ancient Greece, for example, Pliny the Elder describes people saving a piece of their dough from their previous day to raise their bread the next day. People in Gaul and Iberia, otherwise known as France and Spain, use the foam they'd skimmed from beer to produce what he called a lighter kind of bread than other people's.
