What's So Great About Preserved Foods?

Fall harvest season is specifically storage crops, because i'm originally from new england. That's the time of year where you stop being able to get food out of the ground and everything freezes and dies. And then it doesn't start up again until april. A lot of preserved foods are so neat, not just because they are a substitute or because they 're seeing the harvest.
