With corned beef, you've actually dried that meat out. There is less moisture inside the muscle fibre than there would have been if that concentration of salt was lower. A great way to witness that a dry brining fish. So then that goes into the world of preservatives. And like wya salta preservative, because salt concentration at a certain level will actually pull the water out of bacteria, and it will kill the bacteria.
