The production process has the big chunk of the emissions. Coffee that's grown on monoculture plantations, not under the shade of trees, which are reliant on fertilizers and pesticides is a much higher footprint. Dr Aaron Davis says we need to work on certification and labeling to make sure those messages are completely clear to consumers. Back at Cugh Gardens in London, I'm finally going to sample this new variety that could be a game changer for helping coffee farmers deal with extreme weather.
