Many English people had no idea what real Burgundy tasted like because they had been exposed to something else by the trade on both sides of the channel. So an improvement in quality was happening, but not enough good wine was being made at the domain. Many growers said instead of just bottling 10 or 20% of my production, I'm going to see if I can't move to bottling 40%. The next year I'll bottle at 60%.
