Bitcoin still doesn't have a substantial market capitalization. Because of that, the most sophisticated market makers are not yet attracted to trading Bitcoin. The bid offer spread moves around and the way momentum propagates through the marketplace is a little primitive compared to more sophisticated asset classes.
