Heme and Soy Leg Hemoglobin
Heme is a molecule in hemoglobin, like what we have in our blood. It's also in a protein called soy leg hemoglobin. Meat unlike plants contains hundreds to thousand times higher levels of heme than it does in plants. So meat has this distinct behavior where it behaves like a really kind of explosive chemical system. That's why a barbecue smells so good, right? Exactly.
