95% of the food that we get around the world comes from soil. I'm really interested in how we might work with the land to minimize environmental impacts. Louis is a microbiologist, so he looks at what microorganisms are doing in soil. If we can understand how those processes occur in the soil then maybe we can find ways of managing them.
