With cauliflower, you probably won't throw the whole cauliflower right on the fire because that'll just burn before the inside gets cooked at all. You put off to the side, put some foil over the top to concentrate that heat. And then for the last, perhaps half an hour, take that foil off and let it get nice and brown and crispy. This is how you make vegetarian cooking exciting and delicious: adding layers of flavor that contrasts with one another.
